Zucchini Cheese Bread Recipe

This savory Zucchini Cheese Bread is moist, flavorful, and packed with cheesy goodness. Perfect for breakfast, brunch, or as a side dish!

Ingredients:

  • 2 cups grated zucchini (about 1 medium zucchini, excess moisture squeezed out)

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder (optional)

  • 1/2 tsp onion powder (optional)

  • 1/2 cup unsalted butter, melted (or vegetable oil)

  • 2 large eggs

  • 1/2 cup plain yogurt or buttermilk

  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or a mix)

  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)

  • 2 tbsp chopped fresh herbs (parsley, chives, or dill)

Instructions:

  1. Prep the zucchini:

    • Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible to prevent a soggy loaf.

  2. Preheat & prepare:

    • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  3. Mix dry ingredients:

    • In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.

  4. Combine wet ingredients:

    • In another bowl, whisk melted butter, eggs, and yogurt (or buttermilk) until smooth.

  5. Fold everything together:

    • Pour the wet mixture into the dry ingredients and stir until just combined.

    • Gently fold in the grated zucchini, shredded cheese, Parmesan (if using), and fresh herbs.

  6. Bake:

    • Pour the batter into the prepared loaf pan and smooth the top.

    • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

    • If the top browns too quickly, cover loosely with foil.

  7. Cool & serve:

    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.

    • Slice and enjoy warm or at room temperature.

Tips:

  • For extra richness, add crispy bacon bits or diced jalapeños for a spicy kick.

  • Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
