Indulge in these irresistible homemade crunch bars—a healthier twist on the classic Nestlé Crunch bars I craved while pregnant with my twins in 1995! Perfect as a snack or dessert, they’re gluten-free, vegan, dairy-free, and easily made sugar-free.
Ingredients:
-
3 cups crispy rice cereal
-
1 ½ cups chocolate chips (dark, semi-sweet, or sugar-free)
-
1 cup peanut butter (or any nut/seed butter)
-
½ cup maple syrup (or sugar-free syrup)
-
¼ cup coconut oil (or grass-fed butter for a non-vegan option)
Instructions:
-
Prep the pan: Line an 8×8-inch baking dish with parchment paper.
-
Mix the cereal: Add the crispy rice cereal to a large mixing bowl.
-
Melt the chocolate mixture: In a microwave-safe bowl or over a double boiler, melt together the chocolate chips, peanut butter, maple syrup, and coconut oil until smooth.
-
Combine: Pour the melted mixture over the cereal and stir until evenly coated.
-
Press into pan: Transfer the mixture to the prepared dish, pressing it down firmly.
-
Chill: Refrigerate for at least 1 hour, or until firm.
-
Slice & enjoy: Cut into bars and serve. Store leftovers in the fridge.
Tip: For extra crunch, add chopped nuts or seeds!
