 1 onion, chopped
 2 carrots, diced
 2 celery stalks, chopped
 3 cloves garlic, minced
 6 cups beef broth
 1 can (400g) diced tomatoes (optional)
 1 tsp salt
 1/2 tsp black pepper
 1 tsp dried thyme
 1 tsp dried oregano
 3/4 cup pearl barley
