Directions

1. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned and crispy, about 5 minutes.
2. Transfer the sausage to the slow cooker. Add the halved potatoes, green beans, sliced onion, and minced garlic.
3. Pour the chicken broth over the ingredients in the slow cooker.
4. Sprinkle with salt, pepper, thyme, and smoked paprika. Stir to combine.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
6. Before serving, taste and adjust seasoning if necessary. Serve warm and enjoy!

Variations & Tips

For a spicier version, add a pinch of red pepper flakes or use a spicy sausage. If your family prefers a milder flavor, opt for a sweet Italian sausage instead. You can also add other vegetables like bell peppers or carrots for extra color and nutrition. For a vegetarian option, substitute the sausage with your favorite plant-based sausage and use vegetable broth instead of chicken broth.
