Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
Add the ground turkey to the skillet, cooking until browned and fully cooked.
Stir in the thyme, salt, and black pepper.
Add the cubed potatoes, carrots, bell peppers, and frozen peas to the skillet, mixing well.
Pour in the chicken broth, bringing the mixture to a simmer. Cook for about 5 minutes, allowing the flavors to meld.
Transfer the mixture to a greased 9×13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and the top is golden brown.

Let the casserole cool for a few minutes before serving.
Variations & Tips
For a spicier version, add a teaspoon of crushed red pepper flakes or a diced jalapeño to the turkey mixture. You can also substitute sweet potatoes for regular potatoes for a sweeter flavor. If you prefer a creamier casserole, mix in half a cup of sour cream or cream of mushroom soup before baking. For a vegetarian option, replace the ground turkey with a plant-based meat substitute or additional vegetables like mushrooms and zucchini.
