Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the Cream Cheese Filling:

  • 1 (8 oz) package cream cheese, softened

  • 1 cup powdered sugar

  • 1 (20 oz) can crushed pineapple, well-drained

  • 2 cups whipped topping (e.g., Cool Whip)

For the Coconut-Pineapple Topping:

  • 1 (3.4 oz) package instant vanilla pudding mix

  • 1 (20 oz) can crushed pineapple, well-drained

  • 1 cup shredded coconut (sweetened or unsweetened)

  • 2 cups whipped topping (e.g., Cool Whip)

Instructions

  1. Preheat & Prep:

    • Preheat oven to 350°F (175°C).

    • Lightly grease a 9×13-inch baking dish with butter or non-stick spray.

  2. Make the Crust:

    • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.

    • Press evenly into the baking dish.

    • Bake for 10 minutes, then let cool completely.

  3. Prepare the Cream Cheese Layer:

    • In a large bowl, beat cream cheese and powdered sugar until smooth.

    • Fold in drained pineapple and whipped topping until fully incorporated.

    • Spread evenly over the cooled crust.

  4. Make the Coconut-Pineapple Topping:

    • In another bowl, whisk pudding mix and drained pineapple until smooth.

    • Stir in shredded coconut and whipped topping.

    • Spread over the cream cheese layer.

  5. Chill & Serve:

    • Cover and refrigerate for at least 4 hours (or overnight) to set.

    • Slice, serve chilled, and enjoy!
