Ice Cream Sandwiches: The Delicious Recipe for Cookie Ice Cream Sandwiches

🧁 Ingredients:
For the Cookies (makes about 12 cookies / 6 sandwiches):

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar

½ cup granulated sugar

2 large eggs

2 tsp vanilla extract

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 ½ cups chocolate chips (or go wild with M&M’s, white chocolate, or toffee bits)

For the Filling:

1–1.5 quarts of your favorite ice cream (vanilla, cookies & cream, mint chip, etc.) — slightly softened

🥣 Instructions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Make the cookie dough:

Cream butter + sugars until fluffy.

Add eggs one at a time, then vanilla.

In another bowl, whisk flour, baking soda, and salt. Mix into wet ingredients.

Stir in chocolate chips.
