Mutton Curry Recipe

**Instructions:**

1. **Marinate the mutton:** Wash the mutton pieces thoroughly. In a bowl, marinate the mutton with turmeric powder, red chili powder, coriander powder, cumin powder, salt, and ginger-garlic paste. Mix well and let it marinate for at least 30 minutes (ideally 1-2 hours).
2. **Cooking the mutton:** Heat oil or ghee in a pressure cooker or a heavy-bottomed pot. Add chopped onions and sauté until they turn golden brown.
3. **Add tomatoes and spices:** Add chopped tomatoes to the pot and cook until they turn soft and oil starts to separate from the masala.
4. **Add marinated mutton:** Add the marinated mutton pieces to the pot. Stir well to coat the mutton pieces with the masala.
5. **Pressure cook or slow cook:** If using a pressure cooker, add 1-2 cups of water (adjust as needed for desired consistency), close the lid, and pressure cook for about 20-25 minutes or until the mutton is tender and cooked through. If cooking in a pot, add enough water to cover the mutton, bring to a boil, then lower the heat and simmer covered until the mutton is tender (this could take around 1 to 1.5 hours depending on the cut of mutton).
6. **Final seasoning:** Once the mutton is cooked, check for seasoning and adjust salt and spice levels as per your taste. Add garam masala powder and slit green chilies (if using). Stir well and cook for another 5-10 minutes.
7. **Garnish and serve:** Garnish with freshly chopped coriander leaves. Serve hot with steamed rice, naan, or roti.
