Making eclairs might seem daunting, but I assure you, with a bit of patience, the results are utterly rewarding.
Eclairs are perfect as a standalone dessert but pair wonderfully with a cup of coffee or tea. If you’re feeling fancy, a light vanilla ice cream or a dollop of whipped cream on the side can elevate your eclair experience. For special occasions, serving them alongside a platter of fresh fruits like strawberries and blueberries adds a refreshing contrast to the richness of the eclairs.
Georgia’s Classic Eclairs
Servings: 12 servings

Ingredients
1 cup water
1/2 cup unsalted butter
1 teaspoon sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1/4 cup heavy cream (for chocolate glaze)
