1. Cook the pasta according to package instructions until al dente, then drain.
2. In a slow cooker, combine the cooked pasta, Alfredo sauce, and fresh spinach leaves.
3. Stir everything together until the pasta is well coated and the spinach is evenly distributed.
4. Cover and cook on low for 1-2 hours, or until the spinach is wilted and the sauce is heated through.
5. Just before serving, stir in the grated Parmesan cheese until melted and creamy.
6. Serve hot, garnished with extra Parmesan cheese if desired.
Variations & Tips
For a protein boost, add cooked chicken breast, shrimp, or even crispy bacon bits to the pasta. If you have picky eaters, consider blending the spinach into the Alfredo sauce for a smoother texture and a hidden veggie boost. You can also swap the Parmesan for Asiago or Pecorino Romano for a different flavor profile. For a gluten-free option, use your favorite gluten-free pasta. And if you’re feeling adventurous, add a pinch of nutmeg or a dash of red pepper flakes for a little extra kick.
